Sometimes, thinking what to cook and taking time to prepare seem to be an everyday challenge. When that happens, I will always end up doing food engineering or modifying recipes ...lols.

Today I will share with you a simple already-engineered chicken curry hehehe ...easy to follow, just as my dad would say - 'masak cemplang cemplung' ..literally it means 'fuss-free cooking'.

Ingredients:
1kg of chicken parts - cleaned
1 big onion - wedged or sliced
2 potatoes - wedged
1 packet of Ayam brand FISH curry paste (not the powder one)
1 cube of chicken stock - optional
1/4 tsp of 'isi asam jawa' (tamarind)
1 small packet of coconut milk - optional or water

What you must do:
Heat up 1 tsp of oil in wok and stir fry the fish curry paste for a few minutes. Then add chicken parts, tamarind, chicken cube stock and coconut milk or 1 cup of water.

Simmer for 10 minutes. Then add the cut potatoes and onion. Cook to taste. Serve with hot rice, pita bread or prata :) it's finger-licking delicious huhu ..
